Madeo Ristorante, a San Pedro favorite for many years, has a new chef and a new look.
The new Director of Food and Beverage, Patrick Thomas worked as Corporate Chef in Las
Vegas for Boyd Gaming. Thomas was previously the Regional Chef for Marriott and ran
their Culinary Council, planning special functions and menus for all the western states.
He produced and planned the menu, and carved the ice at the banquet for the L.A. Lakers
versus the Utah Jazz (playoffs) in Salt Lake City. Thomas trained at the Culinary
Institute of America (C.I.A.) in Hyde Park, New York, and he studied Nutrition/Sanitation
at Oklahoma State University. Further, he is one of 420 Sanitation and Nutrition
Certified members of the American Culinary Federation.
Im a hands-on chef, I work everyday in the kitchen cooking American
cuisine; fresh fish, fresh herbs, the food looks good, tastes good. I keep the customers
happy, said Thomas. He admits he has feed everybody from the Lakers, to old Bush
to Z.Z. Top. His favorite food is Chinese style, Asian style food, herb rubbed steak,
Cumberland Glaze, sliced medallions of lobster tempura with wasabi butter and curried
snapper stemmed in bamboo. My new menu is out of the box Italian with
Asian/Californian influence, fusion, continued Thomas. He has value priced lunches
from $9 to $11.
Chef Thomas wants the new decor to be reminiscent of P. F. Changs, but only in an
Italian style, and more homey, with greens and vines. Confetti, like a party and
the noise of having fun, said Thomas. He carves ice sculptures of reindeer and
mermaids, and demonstrates his ice sculpture techniques at San Pedro High School once
a month. He also molds life-size chocolate rooster fights. A very valuable trait to
have on the steps of a Balinese temple.
The chef has nearly 200 national articles written about him, and there is a Hall
of Fame with several of the framed articles at the new Madeo Ristorante. Madeo
