Chef Harvey W. Nelson

 
My culinary training started in my mother’s kitchen at age 12. Six years later I went to work in a fine dining restaurant and met my first Executive Chef - and my second teacher. My real education began when I asked him to share his knowledge and skills: He worked me from the dish room to the kitchens, pushing me each day to be the best, to exceed my greatest expectations.

In 1989 I was attending culinary arts continuing education classes at CCSN. There I met my next instructor and coach, a Chef who would help me move to the next level — PJ Thomas. Starting that day I learned about exceeding guests expectations, and realized that this is the objective of a professional chef.

 

 
For the last 12 years I have lived that dream, opening, operating, redesigning, and restructuring culinary operations for leading companies around the United States. Our team has overcome all odds and succeeded again and again.

Our team has worked with the top leaders in the industry. My years of structured training and real-world experience have prepared me for this field, and the daily challenges it brings.

I enjoy the challenge of walking into failing food operations who lack recipes, systems, budget control, and morale. I make it my personal goal to rebuild operations and exceed our guest’s expectations, while at the same time increasing profit to the bottom line. I have high standards and am a staunch advocate of good teamwork. Teamwork is the key to success and can be achieved only through set standards and training from the bottom up.

I have been trained by the best in the industry to work side-by-side with my employees, coaching, counseling and guiding throughout. I never let myself forget where I started and where my purpose lies. I try to learn something everyday from my employees and peers, working with them to share and achieve our goals.

I wish to offer my experience, knowledge and skills to raise your staff and operation to the highest level achievable. I look forward to serving your company, sharing and teaching your visions to your employees and guests.
